Corner Brook couple getting set to open Little Caesars restaurant

Opening up a food franchise was not Catherine Pelley’s first choice as she contemplated life after university.

But with a family franchise history behind her — her grandparents had Tim Hortons and her parents are best known for Subway — it comes as no surprise that’s the route the young Corner Brook woman has chosen to go.

Pelley and her fiancé, Stephen Targett, are getting set to open a Little Caesars Pizza restaurant in the city.

Pelley recently graduated with a bachelor of business administration with a major in marketing and minor in psychology from St. Francis Xavier University in Antigonish, N.S.

Targett, who is also from Corner Brook, was working as a mechanic with a plan to become an automotive technician, before joining her on the new adventure.

Pelley had assumed her degree would lead her to a marketing career in Halifax or the United States.

“Eventually I just realized that Corner Brook is my home. I love it. I’ve never been to a place I love more. The people are just amazing.”

Once she knew she wanted to come home she had to figure out what she wanted to do here and started going through a list of possible franchises. She had tried Little Caesars in the States and liked it, but that’s not really drew her to it. What did was an extra long wait at a pizza place.

She says Little Caesars has a very low transaction time, meaning a customer can get their pizza right away.

After an interview process that took her to Toronto the couple is currently in Moncton, N.B. learning everything they need to know as they get set to open.

Pelley is aiming to have the restaurant, which will be located in the former Menchies location on Union Street, open later this spring.
